Dinner with BB
Tomato Tapenade
300 g dried tomatoes in olive oil
2 roma tomatoes chopped
3 garlic gloves chopped
1/2 bunch of basil
chopped small red chilli
125 g parmezan cheese finely grated
cracked black pepper
handful wild roquette
sprinkle of lemon juice
100 g walnuts
-extra-virgin olive oil-
Put all the ingredients -except for the walnuts and the basil- in a food processor. Pulse until smooth but still chunky. Add the basil leaves and the walnuts. You can add some more extra-virgin olive oil if the mixture is too dry. Delicious on crostini's!!
